Goals and objectives

Students are to be able to:
- use research based nutrition recommendations in practical food/meal
  production or cooking
- put together, calculate and evaluate special diet menus
- plan menus for groups with various food stuff related illnesses
- read and understand research results and critically evaluate information
  about various special diet menus.
- understand and use legislation related to nutrition

Goals and objectives

Students are to be able to:
- use and evaluate methods for developing quality while also taking into
  consideration resources, environment, hygiene and nutrition
- make suggestions for how the quality of a specific product or service
  can be defined
- Plan and describe how quality control for various work operations and
  production of meals can be planned and controlled
- be able to analyse production processes in relation to environmental
  issues and certification, and to integrate environmental management in
  a company's organization
