Rapid analysis - Matalliansen

Welcome to the Rapid Analysis group within The food science alliance

Jens Petter Wold

On-line quality measurements can assist the conscious food manufacturer who seeks to control process and logistics, where the ambitious aim is to optimise usage of raw materials and minimise quality deviation. Rapid measurements offer the opportunity to continuously monitor relevant quality parameters in order to instantly control key manufacturing steps.

Welcome to the Rapid Analysis group within The food science alliance
In a time when competition in the food industry is becoming world-wide, and when the consumers and media demand optimal quality, consistency, safety and low prices, the industry is paying extensive attention to the field of objective and rapid measurement equipment. This technological field is advancing rapidly, constantly offering more sensitive and powerful sensors and computers for efficient sampling and data analysis. This progress has traditionally been quickly adapted by scientists within medicine and physics. More recently the food science and food industry seem ready to benefit from this continuos development.

In the Rapid Analysis group we are a group focussing on development of rapid and non-destructive measurements of food quality and safety. We are working on applications such as determination of fat, moisture, protein and connective tissue in meat and fish meat, rapid detection of micro organisms (patogenes and spoilage), on-line monitoring of bio-processes like fermentation, measurement and detection of lipid oxidation and its progression, on-line sorting of fruit and vegetables, rapid quantification of vitamins and antioxidants in fruits and vegetables, instrumental measurement of various sensory properties. To solve all these problems we use a wide range of instrumental techniques: optical spectroscopy (UV, fluorescence, VIS, NIR, FT-IR, and Raman), mechanical vibration spectroscopy, gass- sensors (electronic nose), and image analysis (microscopy, macroscopy, spectral imaging, texture analysis. Multivariate analysis (chemometrics) is an important tool used with all the methods.
